Sweet Treat without the Calories- Strawberry & Oat Slices

Summer is here (kind of) and fruit is a plenty in the supermarkets. When it is (sometimes) hot outside, I still want a sweet treat but prefer something that is lighter and this tray bake does not disappoint. I bring you Summery Strawberry & Oat Slices! Another thing that makes me love this sweet treat is the fact that it is only around 160kcal per slice, especially as i am always trying to keep the calories down during summer race season.

One slices contain around 25g of carbohydrates so they could even make a great pre or during exercise snack. The mixture of oat flour and wholemeal flour make for a light and quite unexpected texture. O and me being me, a self confessed chocoholic, I had to add a hint of dark chocolate in there which of course is optional. As always the recipe is easy peasy I promise, so go on wow your family and friends with the guilt free sweet treat without calories!

Ingredients

  • 80g Oats
  • 120g Self raising Wholemeal Flour
  • 1/2 teaspoon Baking Powder
  • Pinch of Salt
  • 2 Large Eggs
  • 150g Strawberry Yogurt 
  • 50g Light Brown Sugar
  • 20g Coconut Oil, melted
  • 1 teaspon Vanilla Extract
  • 25g Dark Chocolate Chips
  • 80g Strawberries
  • 1 tablespoon of Maple Syrup

 

Pre heat an oven to 175 C

Measure out your oats and then blitz them in a food processor to turn them into oat flour. Place this and the rest of the dry ingredients (flour, salt, baking powder) in a bowl and set to one side.

In a separate bowl whisk together the eggs, sugar, melted coconut oil, vanilla & yogurt. Mix until it is smooth and fully combined. Then simply add your dry ingredients and chocolate chips, giving it all a good mix.

Line an 8×8 baking tin with greaseproof paper and then pour in the mixture and spread evenly.

Place your strawberries and maple syrup in a food processor and blitz until it is a sauce-like consistency. Drizzle this over the top of the mixture in the tray, swirl it around and make it look pretty. If you have a few choc chips left then sprinkle these on top too and you are ready to bake!

Bake for 25-30 minutes, keeping checking it by place a skewer in the middle. If it comes out clean, you are done! Leave to cool and then cut in to 9 slices.
